Check out these Alabama style white sauce chicken thighs! Cooking these sous vide makes sure they are cooked through and that they turn out nice and juicy without drying out. These turned out delicious!

Darrin’s Chicken Rub
2 tb kosher salt, 1 tb black pepper 2 tb paprika 1 tb garlic powder 1 tb italian seasoning 1 ts onion powder

Season the thighs with the rub, place in bag and cook Sous vide at 155 for 4 hours. 30 minutes before the 4 hours is up, light your fire and add your smoking wood, let it get it up to 350. When the thighs are done in the sous vide, place on pan and add some more rub. When the grill is stable at 350 place the thighs on the grill and let cook for 20 minutes. after 20 minutes, paint the thighs with some of the sauce. let cook for another 20 minutes or so.. take the thighs off the grill when you get the skin crispy, apply more of the sauce and serve!
