This is an easy way to get AMAZINGLY DELICIOUS smoked salmon at home for the DIYer! And, it doesn’t require a lot of fancy gear or ingredients. For one fish weighing about 8-10 lbs, use this recipe:
1/2 cup packed brown sugar
1/4 cup non-iodized sea salt
1 teaspoon or so of black pepper
1 teaspoon or so of garlic powder
Mix and pour over salmon in a bowl. Marinate for 2-3 hours. If you end up marinating too long, rinse and soak in water to reverse marinade. Otherwise, rinse off marinade thoroughly and soak up juices with paper towel. Let salmon drain or parchment or a grill grate for several hours with a fan or breeze to form a pellicle (light crust) on salmon. Smoke over coals that are almost buned out with wood pellets. Keep the lid closed as much as possible to avoid flare-ups. Test salmon after 20-30 min. Smoke to your liking! Store in fridge for up to two weeks or freeze immediately. Enjoy!
