How to cook steak directly on charcoal is the way to go. After going through all the steak recipes, we came back to this charcoal grilled steak, its really good.

Rub recipe is based on NY Times and Tim Byrnes of Smoke in Dallas. I’ve changed it up a bit and made it less spicy, I think the spice heat gets in the way of the sugar and coffee flavors. I love cumin so I amped it up.

2 TBSP of Pimenton Picante, a spanish smoked paprika

2 TBSP Ground Cumin

2 TBSP kosher salt

1/4 cup brown sugar

1/4 cup ground coffee – i used a medium roast set for drip coffee grind, use what you got

This mix will coat about 3 steaks, I kept it covered in the fridge for a week and it was still good.
