This is how I prepare my wood chips for use with the Brinkmann electric smoker. I first soak the wood chips for 45 minutes or so and them wrap them in aluminum foil. Lastly, I poke holes in the aluminum foil, to allow smoke to escape. I love electric smokers because a few handfuls or wood chips will smoke for 6 hours or so. Electric smoking is a lot more cost effective because no propane, charcoal or excessive wood is required. Clean-up if also minimal, if you follow this process. I prefer to smoke with apple wood, hickory or mesquite. Those woods tend to produce the best results for pork and chicken in my opinion!

It is great because it doesn’t require gas or charcoal and uses electricity as the heat source. It is less expensive to operate because of this and maintains a consistent smoking temperature.
