Today I’m making Twice smoked ham in the Masterbuilt Smoker with peach glaze. We’ll add a little maple syrup to this peach glaze and use our new Masterbuilt Smoker Pro 30″ model. This is a perfect smoked ham recipe for Easter, Christmas or any other time of year.
Before we get into the video, I’ll highlight some of the features in our new Masterbuilt 30” Pro Smoker and compare it to our 40” Masterbuilt Electric Smoker.
Ingredients
• 8 lb hickory-smoked ham
• 2-3 tablespoons mustard, plus ¼ cup brown mustard
• 3-4 tablespoons Honey Hog BBQ rub (to taste); for more info see https://www.armadillopepper.com/products/meat-church-honey-hog-bbq-rub
• 4 oz syrup from a can of peaches
• 1 cup Ole’ Ray’s Peach-A-Licious BBQ sauce; for more info see https://www.armadillopepper.com/products/ole-rays-peach-a-licious-bbq-sauce. You can substitute 1 cup peach preserves, ¼ cup brown sugar and ¼ cup Sprite soda.
• 1/3 cup maple syrup
• ½ teaspoon all spice
• ½ teaspoon ground ginger
Recipe Instructions
1. Rub the 2-3 tablespoons mustard on all sides of the ham to use as a binder for the seasoning.
2. Sprinkle the Meat Church Honey Hog BBQ rub.
3. Place the ham in the pre-heated Masterbuilt Smoker set at 275 degrees F with the top vent 1/3 open using peach wood chips.
4. Add the remaining ingredients to a sauce pan over medium heat and bring to a simmer for 5 minutes.
5. Cook the ham until it reaches 135-138 degrees F. For this cook, the time was 2 hours 55 minutes. Apply the glaze to the ham and smoke for another 10 minutes.
6. Turn the ham over, apply another layer of glaze and cook for another 10 minutes or until the ham reaches 145 degrees F.
7. Remove the ham from the smoker and let rest for 15 minutes.
8. Slice and serve!
