This must be one of the easiest dishes to cook on the BBQ as all the prep is done beforehand in the form of a marinade, so they can be ready to put on the grill just before your guests arrive.
As usual the video is presented by top BBQ chef Richard Holden and Ian Hodgett from The Barbecue Shop here at Hayes Garden World and the BBQ used is the new Weber gas Spirit II E-310.
Just combine all the marinade ingredients (recipe on the website) and leave for about 20 – 30 minutes. Heat the skillet on the BBQ to 250C, add a little rapeseed oil and cook the chicken so that’s it’s golden on both sides then move to an area of indirect heat to finish cooking through. As the marinade has a high sugar content keep checking the chicken to make sure that it doesn’t burn.
Finish the dish by garnishing with some chopped peanuts, spring onions and chilli.
