This short video shows how we made our homemade smoker and how we use it. It was built as a quick prototype — but it worked so well it didn’t seem to need improving so it hasn’t been changed for years! It is utterly reliable and seems indestructible – and cost very little. (The wooden chimney is made from ¾” plywood, the racks are made from a cut-up shopping trolley, the wires are fencing wire off-cuts.. )
You can smoke cod, coley, pollack, mackerel, herring, salmon, ling, herring and all sorts of other fish this way — and it’s really easy and they all taste great. You can also hang up bacon strips or strings of sausages – or put anything you like on the racks (tomatoes, mushrooms, peppers, shellfish, cheese, etc., etc.. )
I should have added that if the fire gets too hot, then dampen the shavings with water, or close down the chimney a bit by putting a board over the top.
It only gets used a few times a year, and then the chimney goes back under cover (under the house) and the base just sits there gathering moss — ready to spring back into action at a few moments’ notice.. : – )
