This Smoked turkey recipe will not only smoke your taste buds but will light them on fire! We call this the tamarack turkey! It has some smoke, it has some heat just like the real tree. We smoked this bird to perfection while using some of the best rub/spices we have used. We wanted a thick bark on this bird so we used Lanes BBQ rubs and they were awesome! Turkey Brine:

2 gallons of water
1 cup Brown Sugar
1 cup Molasses
1 cup Honey
1 ½ cup Salt

Bring 1 gallon of water to a boil and add all ingredients. Let cool.

Place turkey inside a Ziploc jumbo bag and pour in brine. Top off the bird with the other gallon of water, making sure the bird is completely covered. Place in fridge for 24hrs.

After 24hrs. remove turkey from bag and rinse under cool water. Pat turkey dry with paper towels and then prep bird for the grill.

Rub bird with peanut oil and heavily coat the turkey with your favorite rub. We used Lanes BBQ Sweet Heat paired with their Garlic rub. Stuff bird with onion, apple and some garlic.

Butter Injection:

1 stick butter
1-2 TBS Franks Hot Sauce
1 Clove garlic minced

Mix ingredients in a sauce pan and melt together. Let cool. Inject into the bird.

Smoke bird between 275-325 degrees. This process took 3-3.5 hrs with a 10-12 lb bird. Make sure you keep an eye on your internal temps. The turkey is done when the breast temperature reaches 165 degrees and the thickest part of the thighs reaches between 170 and 175 degrees.

Let your turkey rest a bit before carving.
