Smoked Bologna with Fighting Cock Glaze on the Gourmet Guru Grill. Today I’ll show you how to smoke a whole Beef Bologna chub on the Gourmet Guru Kamado Grill. This recipe is very simple. We will score the bologna, season it with BBQ rub, smoke it, apply the glaze and then make my favorite bologna sandwich.

Ingredients
• 1 Bologna Chub, 3.5 lbs
• Hoochie Mama BBQ Seasoning, approximately 4 tablespoons, more info here: http://www.armadillopepper.com/Sucklebusters-Hoochie-Mama-BBQ-Dry-Rub-BBQRUB-SKLHCH.htm
• Mustard, 3 tablespoons
• Fighting Cock BBQ Sauce (made by Kentucky Bourbon Q), approximately 1/3 to ½ cup, more info here: http://armadillopepper.com/Fighting-Cock-BBQ-Sauce-BBQSAU-KBQFCK.htm. This is a slightly spicy BBQ sauce. You can use your favorite BBQ sauce, but recommend you use a thin sauce.

Recipe Instructions
1. Heat the Gourmet Guru Grill to 240-250 degrees. I used Fogo natural lump charcoal.
2. Add some cherry and maple wood.
3. Using a knife score the bologna with a diamond pattern.
4. Apply the mustard as a binder.
5. Season with your favorite smoked bologna rub. I am using Hoochie Mama BBQ Rub for this bologna. Just make sure you avoid high sugar rubs for your bologna beause the excess sugar will give the bologna a very dark color.
6. Smoke the bologna for 2 hours.
7. Apply Fighting Cock BBQ Sauce and let cook for 15 minutes. Then, apply a 2nd layer and let cook for another 15 minutes.
8. Serve!
