We’re mixing it up with some Mexican food! These pork carnitas are a delicious treat when braised in a dutch oven on a wood pellet grill. We used our Traeger and a dutch oven to braise the meat and then served it up with tortillas and other fixings. Total prep and cook time is about 3-4 hours.

Ingredients:
Pork shoulder
Coriander (or cumin)
Lard (for frying towards the end)
Kosher salt
Liquid of your choice to braise (we used ginger ale)
