STEP BY STEP GIUDE ON HOW TO BBQ SMOKE MEATLOAF WITH CHEESY CENTER!!
Serving size (base on video) is 8 to 9 people
Meatloaf Ingredients
Seasoning ingredients (all seasoning amount is 1 tablespoon)
1) Weber mesquite bbq rub
2) Kingsford all purpose bbq rub
3) Sazon all purpose seasoning
4) Red pepper flakes
5) Ground mustard
6) Parsley flakes
7) Thyme Leaves
8) Herbs de Provence
9) Italian seasonings
10) Minced onions
11) Ground black pepper
1) Ground Beef
2) Ground Pork
3) 1 cup of shallots
4) 1/2 cup of green onions
5) 2 eggs
6) 1 cup of Panko bread crumbs
7) Pepper jack cheese
8) Mozzarella cheese
9) Corn starch
10) Ketchup
11) Worcestershire sauce
1) Combine all ingredients (minus panko bread crumbs) (DO NOT OVER MIX)
2) Form a cigar like style shape
3) Spread middle of meatloaf open
4) Insert cheese in middle, seal top and reshape meatloaf form
5) Prep pellet smoker for smoking and grilling
6) Place meatloaf center of pit and allow to smoke/cook for 2 hours @ 300 (F) (check every hour)
7) Probe meatloaf after 1st hour to guide remainder of cook (target temp 160 (F))
8) Add bbq sauce to glazed and cook for 10 to 20 minutes
9) Pull of grill and allow to rest 15 minutes
10) Slice, serve and enjoy!!!
