Jamaican Jerk Chicken, soft and moist, spicy and full of flavor

*INGREDIENTS*
10-15 1bs Chicken ( wash & clean, keep skin on)
3 tbsp dry Jerk Seasoning
2 tbsp all spice
2 tbsp salt
8 tbsp Walkerswood wet jerk (mild)
2 tbsp Grace wet jerk ( Hot)

*Marinade Ingredients*
10 stalks scallion & Thyme
2 scotch bonnet peppers
Broad leaf thyme( if available)
10 gloves garlic
Fresh ginger (size of your thump)
2 onions
3 tbsp vinegar
1 tbsp pimento seeds
2 tbsp browning
7 pimento peppers (flavored, not hot)
**Blend everything together**

*Jerk BBQ Sauce Ingredients*
3 cups bbq sauce
2 cups ketchup
12 cup sugar
1 tbsp vinegar
2 tbsp (remaining marinade)
1 tbsp walkerwoods wet jerk (mild)
*Mix together, and there you have a perfect sauce to go with the Jerk Chicken)

*Preparation*
Seasoning chicken with marinade, wet jerk season, dry jerk season and salt, allow to marinate overnight.

Prepare Grill with charcoal or otherwise

Place chicken on grill, make sure the flame is not too high, close lid and allow to slowly cook.

Check on chicken occasionally, use remaining marinade to keep chicken moist

Within 1 1/2 hours chicken should be cooked through, soft and ready

Take them from the grill and serve with homemade BBQ sauce

Make flame very low, heat and smoke makes a moist Jerk.
High flames will ruin chicken
