Simple way to convert your gas grill into a smoker and still be able to use it as a regular gas grill later.

The smoke along with your own homemade dry rub, homemade BBQ sauce, and a spray bottle with a mixture of any of the following: apple juice, Your dry rub, and apple cider vinegar will yield delicious mouth watering baby backs. I cooked/smoked these ribs for 2 hours exposed to the smoke, 1 1/2 hours wrapped in foil surrounded by the dry rub, honey, and butter. Then back on the grill for another 40 minutes to an hour mopping with my homemade whiskey based BBQ sauce. I have to say this was the first time I had removed the grating, the first time I used homemade BBQ sauce, and the first time I had wrapped it with foil halfway through. They were the best ribs I have ever eaten, period.

Your smoke boxes and foil smoke boxes will last anywhere between 40 minutes to an hour. I let the first batch go for 1 hour without opening the grill. At the beginning of the second hour I refilled the smoke boxes and sprayed some apple juice mix on the ribs. I repeated the spray every 20 minutes until I covered with foil. After covering with foil it is not as necessary to keep the smoke pumping, so I waited until I took off the foil for the final 40 minutes and then added more wood chips. The ribs had a nice smoke ring to them and tasted amazing.
