I used the reverse Sear Method.
Seasoned Steak and put in frig for two hours
set pellet smoker to smoke
put steak in smoker on top rack to heat to an internal temp of 115
took out steak and gave a light coating of olive oil
turned smoker up to High heat
after griddle plate was blazing hot, seared steak for 1 minute
gave a quarter turn, and seared for 1 minute
flipped steak and repeated sear.
I found that using the Lodge cast iron griddle plate, directly over top
of the fire pot worked best for me.
