Boneless chicken thighs are an under-appreciated cut. They tend to pack more flavor than breasts, are really easy to cook, and stay tender and juicy cooked a variety of ways.

They are a great choice for the grill, where they pick up the smoky char flavor of the direct flames. Here I show you how to grill chicken thighs to perfection…getting those cool looking grill marks, a flavorful sear on the outside, all while keeping them from getting over cooked.

I dusted mine with some fajita spices…but they can be done the same way with just salt and pepper, or just about any rub. Given them a try, and let me know how it goes.
