If you’re having trouble controlling the temp on your kettle grill, especially for low and slow cooks, the setup I use allows me to cook indirect leaving 1/2 the grill available for the meat, and also so I do not have to add coal during the cook. It also allows me to maintain a constant temperature so I am not constantly fighting temperature spikes and drops.
