I had an expired 100lbs propane tank and I turned it into a wood burning smoker. I’ve built a few smokers before and I incorporated lessons learned into this smoker.
Also I forgot to mention that to protect the meat from direct heat of the fire, I use a round metal plate and large water bowl above the fire to help retain and moderate heat while also providing protection to the food being smoked.
