This Father’s Day video marks the third year in a row that Matt has filmed a Father’s Day video for this channel in the beautiful backyard of his parents home. This is however the first time he has featured a recipe for BBQ Steak & Egg Tacos.
There are only a fraction of fathers out there who don’t enjoy a good steak, and an even lower number that don’t like tacos. Eggs may be an acquired taste for some but across the board just about any father is going to be stoked to get his hands on a taco made of barbecued meat. Knowing this to be true Matt has carefully concocted this recipe for BBQ Steak and Egg Tacos that will remind your dad just exactly how important he really is to you.
Matt starts things off by describing the cut of steak he is using for his recipe. This particular piece of meat is a pound and a half of dry aged, grass fed, tomahawk steak. You can see the ratio of meat to fat clearly as well as the top notch marbling. The first thing you need to check is that you have your grill set to the right temperature for searing. It should be between 450′ and 475′.
The second prerequisite is marinating your steak, which in this case is as simple as coating it olive oil and sprinkling it with salt and pepper. Now put this directly on the grill for approximately 3 minutes per side to sear it, after that we will cook it using indirect heat. Be sure to pay attention to Matt’s grill technique as he has a secret trick he uses to render off additional fat.
Once you have properly seared your steak and gotten rid of that excess fat move it to an area on the grill that isn’t over direct heat. Lower your overall temperature on the grill, shut the lid, and cook the steak for 16-18 minutes. Cooking times are going to vary based on the size and cut of your steak as well as the temperature of your grill. Just be sure not to overcook your precious steak and you’ll be fine.
While the steak cooks it’s time to get the pico de gallo made. Start by chopping a red onion into small pieces, halve or quarter a fair amount of cherry tomatoes, and lastly chop up some cilantro. Combine that into a bowl with sea salt, black pepper, and olive oil mixing it all together well. After this assemble your cole slaw as seen in the video using purple cabbage and thinly slice an avocado.
Take your steak off the grill and let it rest on a cutting board while you cook your eggs. Put your pans on the hottest part of grill and throw your tortillas on as well in a circular pattern around the pans. Oil up your pans and shut the lid of the grill for a short time. When you open it back up take out your tortillas, add your eggs to the egg pans and let them cook. They will cook fast so keep an eye on them. Cut your steak up into pieces as seen in the video, add your eggs to the tortillas, and build your tacos as you see fit.
