This is a beef cross-rib roast that I grilled on my Weber Jumbo Joe charcoal grill. It turned out awesome. I always use a meat thermometer when cooking a roast, and never rely on those pop up things, they sometimes come with. This one didn’t pop up, but I cooked it pretty rare. You have to know the temperature you like your meat cooked to. When cooking larger pieces of meat I always use a meat thermometer.
