BBQ SMOKER – FOR DUMMIES – INSTRUCTIONS BELOW
Taking a Cherry Wood Smoked Pork Tenderloin off a cheap grill that we used for smoking! We got a nice color to the smoke ring and you can get a good look at the set up! When smoking always use indirect heat, never over coals!
Set up grill with charcoal briquets on one side, place tin foil pans on other side to keep charcoal from falling under meat! Put some root beer in the tin pans to keep moisture in meat, place your smoking wood at front, middle and back of briquets! Put lighter fluid on one briquet and light. Once briquet is white, place at front corner on bed of charcoal – this will start a domino effect and burn through all coals, taking about 4 – 5 hours! Place meat on side of grill over pans and smoke for about 1hour per pound(pork tenderloin)! Take off grill wrap in foil, then a towel and place in cooler for an hour our two! Take out chop and enjoy!
For sauce put 2 cups of apple cider vinegar in sauce pan add 2 tbsp of brown sugar, 1 tsp of pepper, 1 tsp salt, 1 tsp cayenne pepper and 1 tsp of red pepper flake…heat until dissolved stirring constantly, take off heat and let cool! Sauce is best when made the day before!
