Grilling with charcoal can be challenging. In this video, we are showing you 5 trick for grilling with charcoal.

Trick #1: Make a two zone grill to keep one side of the grill higher temperature than the other. This way you can sear the meat on direct zone, and move them to indirect zone to let them finish cooking.

Trick #2: Light your charcoal with a paper towel and oil instead of lighter fluid. You may either use a chimney or build a pyramid inside the grill.

Trick #3: Know when you may start cooking after lighting the coal. You will have to wait till the fire is completely out, and the coal turns white hot and ashy.

Trick #4: Add soaked wood chips or fresh herbs to the charcoal to add extra flavor to your grilled food. Soaked wood chips add extra smoky flavor that we love. Fresh rosemary is our favorite herb to add to the coals for extra flavor.

Trick #5: Know the temperature of the charcoal grill. The trick to telling the temperature of the grill is to hold your palm 4 inches above the grill. If you can hold it for 2 to 4 seconds, it is high temperature around 500 degrees F. If you can hold it for 5 to 7 seconds, it is medium heat around 300 degrees F. If you can hold it for 8 to 10 seconds, it is low heat around 200 degrees F. If you can hold it for more than 10 seconds, you may need to add more coal.
