This video demonstrates how to smoke a Beef brisket on a Pellet smoker without wrapping. The total cook time on this took about 12 1/2 hours. The first 2 hours were smoked at a high smoke setting of 220° F and then dropped to 200° F for 6 more hours. After 6 hours the temp was increase to 250° F for 4 1/2 hours.

This brisket size made it a great candidate for being wrapped, but because I wanted to achieve a darker bark, I left it unwrapped. If you do plan on wrapping your briskets to expedite the process, wrap it at around 160°-170° F.
